The future of the Hautes-Côtes

Boris Champy enthusiastically believes in the future of Hautes-Cotes, since their altitude is favorable in a global warming context. With the new generation of winegrowers, he wants to, continue to raise the reputation of this less-known coast. The aim is simple: show the subtle differences between the plots’ “terroirs“, by enhancing the different soil types, sun exposures, slope inclinations, combined with the “vigneron’s” practices, which lead to a unique wine.

In altitude, the Domaine practices a respectful viticulture. Our single plot vineyards are large biodiversity islets, which harbor multiple «clos » with trees, hedges, stone walls, stones piles, orchards… Boris knows a holistic approach is required since the vines’ health depends the ecosystems’. Infering that the management practices should enhance biodiversity and natural processes.

We express each grape’s quintessence thanks to subtle and gentle winemaking. Our quest is to make great natural and fine wines.

The cycle then continues in the cellar with the marrying of the wine and the wood: a precise aging that subtly enhances each plot.
